SmoothieBreakfast Smoothie

Choose from the following ingredients and blend to your desired consistency: banana, blueberries, chia seeds, oats, flax seeds, almonds, dates and almond milk (or any other milk to increase calories).

Red Pepper & Tomato Soup

Ingredients

  • 2 red peppers
  • 3 tbsp olive oil
  • 1 onion (chopped)
  • 2 cloves of garlic (crushed)
  • 400g tin of chopped tomatoes
  • 1 pint of vegetable stock
  • black pepper
  • 150ml of semi-skimmed or full fat milk

Soup recipeMethod

  • Cut the peppers into quarters and de-seed.
  • Grill and cook the pepper skins side-up until skin is charred then transfer them to a bowl
  • Cook the onions and garlic until soft in a large pan
  • Remove the charred skin from the peppers and chop them
  • Add the peppers to a large pan with onions and garlic, cover and cook gently for 10mins
  • Stir and cook for a further 5mins
  • Add the tinned tomatoes, vegetable stock and some black pepper then simmer gently whilst covered for a further 20mins
  • Blend the soup until smooth
  • Add the milk and warm gently
  • Serve with bread
